Red Wine Eggless Chocolate Mousse

Smooth, creamy, and decadent red wine eggless chocolate mousse. Bitter dark chocolate paired with a sultry kick of red wine is sinfully delicious! The best part is that the mousse is quick and easy to make and doesn't have any eggs. It's the perfect, seductive date night or Valentine's Day dessert for two. You only need four ingredients (chocolate, wine, whipping cream, and sugar), as well as some seasonal fresh red berries for decorating. The mousse is served in wine glasses as an ode to the ample amount of red wine that gives this mousse a noticeable kick.
In a small saucepan or microwave safe bowl, combine chocolate and wine (or wine and water). Melt on low heat stirring constantly until melted and smooth. If using the microwave, melt in 15 second intervals.

While the melted chocolate cools, combine whipping cream, vanilla extract, salt, and sugar in a mixing bowl. Whisk to stiff peaks with an electric mixer or a balloon whisk. Set aside ¼ cup of the whipped cream.

tbsp granulated sugar
Once the melted chocolate cools to about body or room temperature, add the whipped cream and gently fold the mixture together. Use a spatula and stop folding as soon as there aren't any streaks left in the mixture.
Divide the mousse between two wine goblets. Smooth the top and add a scoop of whipped cream to each. Cover and refrigerate for at least 1-2 hours to set the mousse.
Decorate with chocolate shavings and fresh red berries. Serve and enjoy!
