Dulce de Leche Caramel Waffle Cake

This dulce de leche caramel waffle cake is made by combining butter and cooked sweetened condensed milk, and spreading that between plain wafers. It's a family favorite and is so easy to make that you don't even really need to follow any recipe! It's soft and airy, while still maintaining a bit of crisp and is not soggy whatsoever. An Eastern European classic cake, with a rich buttery caramel flavor.
Add the softened butter into a large bowl and beat with an electric mixer until light and creamy.

Add salt and dulce de leche, and mix until creamy.

Spread filling evenly between wafers. Top the last wafer with biscoff crumbs or another wafer.

Place a piece of parchment paper over the wafers and lay a cutting board on top. Put a heavy weight like a jar of water on top for 2 hrs.
Biscoff cookies
Slice into diamond shapes using a serrated knife and a sawing motion. Enjoy!
