These banana bread cookies have all of the buttery, toasty, chunky banana flavor in a cookie with crisp edges and chewy center. It uses two bananas for all of that banana flavor, and also includes walnuts toasted in browned butter and loads of gooey chocolate. I've tested this recipe so many times to ensure that the center stays chewy (not cakey) and that the edges are ultra crisp. Plus, you don't need an electric mixer because it comes together with a wire handheld whisk.

Combine the butter and walnuts in a medium saucepan. Heat to melt the butter and continue cooking as it bubbles, carefully stirring frequently to prevent it from burning. Remove it from the heat when the walnuts smell toasty and the white bits in the butter turn brown.
